Under new name, fast casual chicken restaurant plans to open this fall - The News Journal

A new fast-casual chicken restaurant is set to open in Christiana in late October or early November under a fresh name: Colbie's Southern Kissed Chicken.

The Colby Restaurant Group, owners of Chuck Lager-America's Tavern in Pike Creek and several Red Robin restaurants in the region, changed the name from Dixie's Southern Kissed Chicken after the band Dixie Chicks dropped the "Dixie" from their name earlier this summer.

The term "Dixie" is considered a nostalgic nickname for the Civil War-era South.

"I don't want anybody to think we're not all-inclusive," restaurateur Craig Colby said.

The new restaurant is being built off Route 7 between Border Cafe and Royal Farms. A location in Mount Holly, New Jersey is slated to open around the same time. A third restaurant in Orlando, Florida is also in the works.

Colby purposely spelled his family name with an "ie," saying it's a better fit for the reworked branding.

Colbie's will serve hand-breaded chicken tenders and sandwiches (offered fried or grilled), wings and a variety of carnival-type foods including fried Oreos, chocolate waffles, floats and milkshakes. 

It will also be open for breakfast offering hot cakes and breakfast sandwiches.

The building itself will take on a rustic, industrial feel and feature an outdoor seating area.

The restaurant will be the second business built on the 21-acre Delaware SPCA property along Route 7, following Royal Farms in 2018. The SPCA opened the front of its property for business to ensure future financial viability.

Celebrity chef and former Top Chef contestant Fabio Viviani and former Philadelphia Phillies first basemen Ryan Howard are among the co-founders.
